Prepping Lunches – Slow Cooker Style

Monday mornings can be hard to adjust to. I have two things on side though: as a stay-at-home mum, I’ve no work to get ready for and in lockdown, one day is much the same.

But you know you’re on it when you’ve done a work out, showered and got lunch on the go before you’ve even inhaled your first coffee. Believe me, very little usually gets done before I’ve had a sniff of caffeine.

I was feeling so accomplished as I seared my breasts (of the chicken variety) and put away the Sainsbury’s order, that I even put on my Wonder Woman jumper to celebrate my wins.

Now lunch has rolled around and the appetising smell of sweet and spicy chicken has welcomed us back from the skate park. A head of broccoli steamed, 4 containers and 1 plate and I am good to go with my under 300 calorie plates of joy sorted for the week.

Honey Sriracha Chicken (adapted from Chef Savvy)

  • 4 chicken breasts
  • 40g ketchup
  • 40g low sodium soy sauce
  • 40g honey
  • 1 lime juiced
  • 1-2 tablespoons of sriracha
  • 3 teaspoons of garlic purée
  1. Sear chicken breasts in a pan
  2. Place them in slow cooker
  3. Mix all other ingredients in a bowl and pour over
  4. Slow cook for 4-5 hours on medium (5-6 on low)
  5. Thicken with a spoon of cornflour mixed in water if too runny
  6. Once cooked, shred chicken breasts with two forks

I served with steamed broccoli and have 4 more portions to get me through the week without having to use any brain power. It’s hard enough inventing meals to entice a toddler each day; I shouldn’t have to think about mine too.

Yes. Wonder Woman may be a little generous but if I can’t show myself some love, no one else is gonna! Now Wonder Woman wants a cuppa and to put her feet (and lasso) up.

  1. OMG that looks mouth watering. I’m glad you didn’t sear your own breasts. Made me sweat for a minute there. I do a delicious sausage casserole without tomato. husband isn’t a huge fan of anything tomato based so I found a new one and it’s scrumdidliumptious.

      1. Ok so.. we don’t like anemic sausages so I cook them first to burn them and set aside. Then boil a red pepper and a couple of carrots till soft then nutribullet until you get a paste. Add a pint or so of chicken stock and blend to make a sauce. Then to a casserole dish add chopped mushrooms, onions, cooked chopped carrots and potatoes, any sort of beans /lentils, a sprinkling of mixed herbs, the sauce you just made, the sausages and cover and oven cook for about an hour at 180. Stir half way through. Serve and enjoy!
