Why is it that Harry has coordinated fussy eating and disdain of all things veg with the very season that requires the need for a vitamin boost to stave off those bugs.
As he snots and sniffles and clings on to me for dear life, I wanted to sneak some goodness in to him. The challenge being I only have one arm as he refuses to be put down. Cheesy Sweetcorn and Spinach Fritters it is.
I started making these for Harry in those wonderful home-cooked heady days of weaning. Remember: when there was not even a sniff of salt or suggestion of sugar. To say I’m a little less draconian now would be a laughable understatement. Another Pom Bear and piece of cake little man to avoid a defcon level 5 tantrum – ahhh, go on then!
So one-handed with my Ninja Nutri Bullet I whip up this simple batter.

- 60g self raising flour
- 2 tbsp grated cheddar cheese
- 340g tinned sweetcorn (drained)
- 2 medium eggs beaten
- Two handfuls of spinach
- 1 glug sunflower oil for frying
I’m all about ease so with child under one arm I whack the sweetcorn, egg, flour and a good slug of pepper in the whizzer. No beating or mixing. The less utensils and things to clean after the better. Once that’s blended, I add the cheese and my special ingredient, the spinach. I found this recipe on the ‘Made for Mums’ weaning app but added the green stuff and have found kale works as well as spinach.
Once you have your batter it’s just a case of frying the little green blighters up. Fry them until both sides are golden brown and the egg is cooked through.
No prizes for uniformity or attractiveness but I challenge you not to take down at least two of the tasty buggers in the process of making them! I make a batch and freeze in threes so I can defrost for a quick addition to lunch.
