The pre-requisite of every sleep deprived parent – coffee. And more coffee. I can’t function until the Nespresso machine has been cranked up and I’m supping on a hot cup of personality. So imagine my pure joy when I discovered a recipe for coffee-infused overnight oats on the My Fitness Pal blog.
The additional joy of overnight oats is one of the tags on their blog reads ‘eating for weight loss’. Coffee and shifting some poundage? Get in my belly! I’ve prepped six of these bad boys for the week and thanks to their creator, Love & Zest, I’m going to have an extra spring in my step.
- 45g old fashioned oats
- 60 ml coffee
- 60ml unsweetened almond milk
- 1/2 scoop vanilla protein powder
- 1 tablespoon chia seeds (I didn’t use these but still thick and creamy without)
Basically whack it all together and stir in a jar or container and leave overnight for the oats to soak in all that coffee loveliness and soften. Breakfast and ability to cope with the day sorted!
